I’m Jennifer and I love to cook. I’ve been vegetarian for several years, but never thought I could give up cheese. Just ask my family…I had a serious cheese addiction! My husband Jon and I decided to go (mostly) vegan after watching Forks Over Knives, a pretty incredible documentary about the health benefits of eating vegan.
To my surprise, it wasn’t all that difficult and I hardly ever miss dairy or my formerly beloved cheese! I consider myself a creative cook and while I will often reference cookbooks for recipe ideas, these are usually just the jumping-off point for my own version of a dish. I don’t like to measure ingredients, which means I don’t usually bake, but instead prefer to cook by “instinct”…what feels and tastes right.
